1. Meal Plan Update

Spring Semester Meal Plan:
          If you're STILL not signed up yet, the details of the Spring
Semester Meal Plan are available at the Co-op.  Not much has
changed, but
there is now an added discount for larger meal plans.  For details or
general information, ask for a copy of the brochure/registration form or
talk to a staff person.
***There are currently (as of 01/28) ONLY 5 spaces left, so spread the
word to sign up SOON.


***The following people have registered for working meal plans and have
NOT yet signed up for a shift. If you accidentally chose a working plan,
or you've changed (or lost) your mind, please talk to a staff person about
changing your registration. As usual, we're open this weekend from 12-5 on
Saturday and Sunday.

***Lucy held worker orientations this week, so if you missed out on that
please talk to her about it. There's some important stuff you need to
know, but we won't go into that here, you must SEE for yourself.

*Friendly reminder: all meal plans need to be paid in full by February 4th.

2. Meal Plan Menu for the Week*

MONDAY: French Onion Soup, Whole Wheat Muffins
TUESDAY: Vegetarian Chili
WEDNESDAY: Baked Orzo w/ Spinach & Pine Nuts
THURSDAY: Pumpkin Ricotta Lasagna
FRIDAY: Quinoa w/ Chickpeas and Sundried Tomatoes
*All meals are served with mixed green salad and homemade salad dressing

3. GET INVOLVED!

   Attention Members: Many of you know that the Co-op is considering a
move. There's been much talk and maybe you're wondering, "Where's all
the action?"
And now, the answer: COMMITTEES!
In case you missed the emails, don't miss this one!

1. Alternative Site Committee: SEE exciting new spaces, EXPLORE the
Co-op's possibilities, FIND our new home! Members of this committee will
determine the Co-op's expansion needs and investigate available properties
to find the right fit for us. To help us cooperatively do these things,
they will create a questionnaire for interviews with potential
landlords/property managers so that everyone gathers and receives
consistent information.  Nan Erbaugh and Amy Ritchie, both board members
and WONDERFUL WOMEN, are serving on the Alternative Site Committee. You
could join them!

2. Economic Support Committee: WOW your friends and neighbors with your
newly cultivated EXTENSIVE KNOWLEDGE of WAYS TO GET and USE MONEY! Members
of this committee will investigate the money end of things by exploring
the realm of Co-op finances and attempting to project the economic future
of an expansion. This committee will also attempt to research sources of
funding (i.e. grants and the like) to help us with the move. This is
especially interesting because Richmond is rumored to contain untapped
resources for community members who find innovative ways of reviving
spaces, which we're ALL hoping to be a part of, RIGHT?? Plus you'll be
working with Board members Jen Ferrell and Jennifer Ziebarth, both
awesomely cool.

*** Both committees will report progress to the Co-op board each monthly
meeting until a final recommendation is made AND make sure that their
progress and info is available to ALL members.

***Anyone wanting to explore options for expansion please talk (or email)
to us here at the Co-op (983-1547) with your undying interest in serving
on one of these Committees. Here's to mapping our dreams into the future!
 Meeting times will be scheduled soon, DON'T MISS OUT!!!

5. Recipe of the Week: Garlic Stuffed Eggs
from The Quick & Easy Vegetarian Cookbook by Ruth Ann and William Manners

When garlic is slowly cooked, it loses its sharp bite and becomes smooth
and mellow. Nine cloves of garlic may sound like a lot, but it's no
mistake.
PREPARATION TIME: 5 minutes
MAKES 12 HALVES
COOKING TIME 10 MINUTES

9 cloves garlic, peeled
6 hard cooked eggs

In a small saucepan, cover the garlic with water and bring to a boil.
Reduce heat and cook slowly 10 minutes. Drain, transfer to a small bowl
and mash the cloves with the back of a spoon or mortar and pestle. Slice
eggs in half lengthwise, remove yolks and add to the bowl, stirring and
blending into the garlic. Set aside whites.

1/4 tablespoon lemon juice
1 tablespoon finely chopped dill pickle
salt and pepper to taste
3 tablespoons olive oil or salad oil
paprika
1 tablespoon chopped parsley

   Add lemon juice, dill pickle, salt, and pepper to the bowl and blend
all ingredients together with a fork. Slowly dribble in the oil,
beating with a fork until the mixture is smooth and pasty.
    Fill the egg whites with this stuffing, dust with paprika, and
sprinkle with chopped parsley. Serve chilled.
