4. Recipe of the Week: Pesto Sauce
from: Ayurvedic Cooking for Westerners by Amadea Morningstar
prep time 10 minutes
Makes 2 cups
Steam in a steamer in a small saucepan for about five minutes:
1 large clove garlic, unpeeled
Grind until finely powdered in a blender:
1/2 cup pine nuts or walnuts
Add to the nuts in the blender:
2 cups loosely packed fresh basil leaves, then chopped
1 cup fresh Italian parsley, chopped
1/8 cup extra virgin olive oil
2 teaspoons miso
3 tablespoons raw sesame tahini
1/2 cup water or little more (enough to be able to blend the sauce smoothly)
...and blend until the sauce is creamy smooth. Blend the garlic into the
sauce, peeled and minced. Serve!
