3. Recipe of the Week: Borscht
serves 6

    Use:
2 cans pickled beets
3 cans regular sliced beets
1 box chicken (or substitute) broth
1 stalk celery, diced
2 medium size carrots, diced
1 medium size yellow onion, diced
4 cups mashed potatoes

Sautee the celery, carrot and onion until tender. Add beets with their
accompanying liquid and broth. Add mashed potatoes to thicken slightly.
Season with salt or pepper to taste. Lucy suggests lots of pepper. Serve
warm with sour cream.
