Spring cleaning anyone? Time for another one of those work day hootenanies
you've all heard about. Check yourself to spare an hour on Satuday, April
2nd to come on down to the Co-op and get some hot drinks, baked goods, and
work done. All aboard and Woo Hoo!

4. Recipe of the Week: Apple Butter-Peanut Butter Cookies
from Sweet & Natural by Janet Warrington

The last step in making these cookies is chilling them in the
refrigerator. This ripens the peanut flavor.

Preparation time: 45 minutes to prepare and bake, 1 hour to chill
Yield: 32 moist, peanut cookies

Ingredients:

1 cup Apple Butter
1/2 cup natural style chunky peanut butter
1 teaspoon vanilla
3/4 cup nonfat powdered milk
3/4 cup whole wheat flour
1/2 teaspoon salt, if peanut butter is unsalted
1/2 teaspoon cinnamon, if no cinnamon has been added to the apple butter
1/2 cup raisins

1. Prepare cookie sheet with oil or lecithin
2. preheat oven to 350 degrees
3. in a large bowl, beat apple butter, peanut butter and vanilla
4. Stir together in a medium bowl, powdered milk, flour, salt(optional),
cinnamon (optional) and raisins.
5. Add dry ingredients to apple butter mixture and mix well.
6. Drop by teaspoon onto prepared cookie sheet. Flatten with fork dipped
in ice water, making a criss cross pattern on top.
7. Bake at 350 degrees for 10 minutes.
8. Cool. Refrigerate until well chilled. Serve cold.
9. These freeze well.
