1. NEXT MEMBERSHIP MEETING! (April 24th, 4pm)

The spring membership meeting is THIS Sunday, April 24th at 4pm in the
Co-op. Please join us for both small and large group discussion during
which we hope to involve your questions, needs, and ideas for your Co-op's
future.

2. MEAL PLAN MENU FOR THIS WEEK (last week!)

In honor of Passover, which many meal planners observe, Lucy has rewritten
the menu for this week to provide kosher meals. Yay Lucy!

4. RECIPE OF THE WEEK:Beet Borsch from Vegetarian Gourmet Cookery by Alan
Hooker
Shred, using the coarse cone of a gricer, or grate over the coarse portion
of a flat hand grater, but do not peel:
3 1/2 lbs beets
Cook: (if you have a pressure cooker, 15 minutes on 15 lbs)
 shredded beets
 6 cups water
 1 large onion, finely chopped
 1 tomato, chopped, or 1/2 cup tomato sauce
 Juice of 1 large lemon, or to taste
 1 teaspoon salt
 1 teaspoon granulated white sugar
 1 teaspoon soup herb blend
 3 fresh sorrel leaves
 When cooked, put through a sieve, using as much pulp as necessary to
achieve desired thickness of soup, add while still hot:
1 egg yolk, lightly beaten with a small amount of juice from
straining(optional). The mixture should be very piquant in taste. Cover
and chill, preferably overnight.
 Cook: (if in a pressure cooker for ten minutes at 15 lbs, then reduce
pressure immediately)
 4 potatoes
 1 cup water
When JUST cool enough to handle, peel and halve the potatoes. Divide beet
mixture among 8 soup bowls. Add to each bowl:
1/2 potato
1 tablespoon finely chopped cucumber
1 heaping tablespoon sour cream
The potato must be very hot when dropped into the cold soup.
Makes 8 servings
