1. MEMBERSHIP MEETING MINUTES

  Thanks to everyone that decided to attend the membership meeting. Anyone
interested in obtaining a copy of the minutes should contact Amy, our

4. RECIPE OF THE WEEK: Guacamole Dip, from The Gluten Free Gourmet by
Bette Hagman
Ingredients:
2 ripe avocados
1 tablespoon grated onion
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon chili powder
1/3 cup mayonnaise
hot sauce or a salsa to taste

Peel the avocados and mash in a bowl with a fork. Stir in the onion, lemon
juice, salt, and chili powder. Blend in the mayonnaise. Add the hot sauce
or a salsa to taste, depending on how hot you like it. Chill covered
tightly with plastic wrap. Serve with corn or tortilla chips. Makes
approximately one cup of dip.
