1. NEW SUMMER HOURS
Tuesday-Saturday 12-6
Sunday-Monday Closed
Regular hours will resume August 22nd

The Meal Plan will not be operating during the summer, but there will be
limited sandwiches available beginning May 17.

2.SUMMER ORDERING SCHEDULE
 With the slow down of traffic through the Co-op during the summer hours,
we will also be altering our ordering schedule.  This is important
information for those members who regularly place bulk member orders.  We
will continue to order on Thursdays, but pickup will not be available until
Tuesdays (rather than Mondays, as is the case during the rest of the
year).
We will be placing orders on the following weeks (with dates of available
pick up in parentheses):

May 5 (May 10)
May 19 (May 24)
June 2 (June 7)
June 16 (June 21)
June 30 (July 5)
July 14 (July 19)
July 28 (Aug 2)
August 11 (August 16)

4. RECIPE OF THE WEEK: Curried Wheatberry Salad from the Clear Creek Cookbook

Serves 4

Dressing:
Juice zest(grated peel) of one lime
1/2 cup olive oil
1 teaspoon curry powder
1 teaspoon hot curry powder
1/4 teaspoon cumin
salt and pepper to taste

Salad:
3 scallions(sliced thin)
1 cup walnuts (toasted and chopped)
1/2 bunch cilantro(chopped)
1 cup dried cherries(or cranberries)
1 tart apple (diced)
1 cup wheatberries (soaked overnight)

In a medium saucepan, cook the wheatberries in plenty of water until
tender. Keep adding water to ensure that the berries are covered. After
cooked, drain the grain in a colander and set aside to cool.

Meanwhile, whisk together the dressing ingredients. Stir everything
together except cilantro and walnuts. Toss with the dressing. Refrigerate
for several hours or overnight to let the flavors meld together. Stir in
cilantro and walnuts just before serving. Serve cold or at room temp.
