Monday-Soft Polenta with Carmelized Onions and Wilted Greens
Tuesday-Thai Green Curry
Wednesday-Taco Bar
Thursday-Broccoli Pine Nut Pasta Salad
Friday-Spicy Pumpkin-Coconut Soup, Whole Grain Bread

All meals served with mixed green salad.  Meals available between 11:30
and 1:00

We have had a fairly good response to the appearance of new produce in the
past two weeks.  New items that will be making an appearace on Tuesday
include:

Joi Toi and Totsoi (these are Asian greens grown LOCALLY  from Salem Road
Farms.  Great sauteed in a little olive oil and garlic!)
Baby Carrots (1lb bags)
Apples, Pink Lady
Apples, Granny Smith
Valencia Oranges
Romaine Mix
Spinach
Yams
Cabbage
Russet Potatoes

4. Recipe of the Week: Pad Thai
You asked for it, so here it is!  Compliments of Lucy's mom...

6 oz. Med. Width rice noodles
½ teaspoon oil
2 eggs
3 Tablespoons dry sherry
3 T. rice vinegar
2 T. brown sugar
2 T. soy sauce
2 t. Thai chili sauce
3 cloves minced garlic
2 c. bean sprouts
¼ c. minced red bell pepper
¼ c. scallions
¼ c. cilantro
¼ c. peanuts
1 lb. Tofu

Heat wok or large skillet over medium heat; add 1/2 teasp. Oil Add   eggs;
lift and tilt to form a thin egg sheet. Cook, without stirring   about 2
minutes  or just till set. Slide egg sheet onto a cutting   board; cool.
Roll up egg sheet and cut into thin slices.

Crush peanuts

Slice tofu and press out moisture. Add more oil to skillet and fry up  
tofu slices.

For sauce, combine sherry, rice vinegar, brown sugar, soy sauce, and  
chili sauce in a bowl. Set aside.

Cook and drain noodles.

Heat oil in skillet Add garlic and cook for 30 seconds. Add sauce and  
noodles; toss til heated through. Add bean sprouts, red pepper,
onion, cilantro, peanuts and egg. Toss til well mixed
serves 6 as a side dish
