3.Bins for Sale!
The Co-op is trying to get rid of some of our old bins (and make just a
little on the side). We are selling the old scoop bins for just $5 EACH
or 6 for $20 (remember...the new ones cost us $100/each!). We also
obtained a new supply of glass spice jars. We are selling these for $1.00
each You can't beat that! Come have your pick.

5.Recipe of the Week: Chocolate Bean Cupcakes
(yup, that's right...BEANS! What a tasty way to get your protein!)
Cupcake ingredients:
1/3 C soy margarine, melted
1 ¼ C granulated sugar
2 large eggs or ½ C egg substitute
2 t. vanilla extract
2 T grated orange zest, optional
1 15.5 oz can black beans, drained, rinsed and pureed
½ C unsweetened cocoa powder
1 C all-purpose flour
2 t. baking powder
Frosting ingredients:
½ C soy margarine
2 C confectioner's sugar
4 T frozen orange juice concentrate, thawed
12 chocolate candies (perhaps a dark chocolate covered almond or espresso
bean from the Co-op?)
Preheat oven to 375 F. Beat margarine, sugar and eggs for 3 minutes, or
until thick and creamy. Fold vanilla extract and orange zest, if using,
into pureed beans. In small bowl, whisk together cocoa powder, flour and
baking powder. Fold egg mixture inot benas, the fold flour mixture into
beans by thirds. Fill cupcake tins two-thirds full. Bake 20 minutes, or
until toothpick comes out clean. Cook in pan 5 minutes. Remove, and cool
on rack
Meanwhile, make frosting: Using electric mixer, beat margarine until
smooth. Beat in confectioners' sugar then juice concentrate until smooth.
If too stiff, add 1 t. water at a time. Top each cupcake with 2 t
frosting and a chocolate candy (
