1. Co-op Summer Hours
The Co-op will begin operating under the following hours beginning May 8th.
May 8-12 11am-6pm
May 13 (Saturday) 12-5pm
May 14 (Sunday) Closed
May 15 (Monday) Closed
After this point we will have fairly regular summer hours of:
Tuesday-Saturday 12:00-7:00
Sunday and Monday Closed
We will keep you posted as to any changes that we anticipate during the
summer.
2. Looking for Fun this Summer?
Maybe you are looking for a way to chill out in the middle of the summer
heat. Or maybe you need to commune with whole grains and Toffuti Cuties.
Maybe you have just always wanted to help out the Co-op.
The summer is a time at the Co-op where things slow down. But it doesn't
mean we take a total break! We are looking for some Co-op supporters who
could give some time here and there to cashier at the Co-op in the moments
when Carrie and Torin will need to be out of town. We keep going, but as
you probably could guess, our finances take the "dog days" of summer
literally and it is unfeasible to keep a fully paid staff to help with
this backup.
Most likely this would mean covering a 7 hour day at the cash register,
but we would fully train you on how to do a MARVELOUS job.
If you can help us out by being a volunteer cashier on an "as needed"
basis, please contact Carrie or Torin at the Co-op. 983-1547.

4.Bins for Sale!
The Co-op is trying to get rid of some of our old bins (and make just a
little on the side). We are selling the old scoop bins for just $5 EACH
or 6 for $20 (remember...the new ones cost us $100/each!). We also
obtained a new supply of glass spice jars. We are selling these for $1.00
each You can't beat that! Come have your pick.
5. Recipe of the Week: Turkish Bulgur Pilaf
1 to 2 T olive oil
1 1/2 C minced onion
2 medium stalks celery, minced
1 t. salt
2 C uncooked bulgur
2 1/2 C boiling water
1/2 C dried currants
1 C sliced dried apricots
1 C chopped, toasted walnuts
1/2 C finely minced parsley
3 T minced fresh dill
lemon wedges for garnish
1. Heat the oil in a large heavy saucepan. Add the onion, celery and salt
and saute over medium heat unitl the veggies are tender (8-10 minutes).
Stir intermittnetly.
2. Add the bulgur. Continue to saute, and stir fairly attentively over
medium low heat until the bulgur is lightly browned and everything is well
coated and integrated (about 5 minutes)
3. Add water, currants, and apricots. Cover and remove from heat. Let
stnad for about 25 minutes, or until the bulgur is tender and the water is
absorbed.
4. Mix in the walnuts, parsley, and dill just before serving. Garnish
with generous, squeezable wedges of lemon.
