1. Pancake Breakfast
Rae Hunter will be hosting the Co-op Graduation Pancake Breakfast,
Saturday May 6 from 9-11:30 at the Co-op.  Tickets are $5 for wonderful
homemade whole wheat pancakes with fixins.  All are welcome (you need not
be a graduate!).  While the food lasts!

2. Summer Hours
Beginning this week we operate under reduced summer hours.  Summer hours
are Tuesday-Saturday 12:00-7:00pm, Closed Sunday and Monday.  Please note,
this starts Sunday which means we will be CLOSED this Sunday and Monday.
We hope you all have a great summer!

3. Looking for Fun this Summer?
Speaking of the summer Maybe you are looking for a way to chill out in the
middle of the summer heat.  Or maybe you need to commune with whole grains
and Toffuti Cuties. Maybe you have just always wanted to help out the
Co-op.

The summer is a time at the Co-op where things slow down.  But it doesn't
mean we take a total break!  We are looking for some Co-op supporters who
could give some time here and there to cashier at the Co-op in the moments
when Carrie and Torin will need to be out of town.  We keep going, but as
you probably could guess, our finances take the "dog days" of summer
literally and it is unfeasible to keep a fully paid staff to help with
this backup.

Most likely this would mean covering a 7 hour day at the cash register,
but we would fully train you on how to do a MARVELOUS job.

If you can help us out by being a volunteer cashier on an "as
needed"basis, please contact Carrie or Torin at the Co-op.  983-1547.

6.Recipe of the Week: Tofu Nicoise Salad
¼ C Italian Dressing
1 T fresh lemon juice
1 clove garlic, finely chopped
1/8 t freshly ground black pepper
6 C baby salad greens
4 medium sized tomatoes, each cut into 4 wedges
2 8oz pkg baked tofu, cut into 8 slices each
¼ lb. Baby green beans, steamed and chilled
4 medium-sized white mushrooms, thinly sliced
16 black nicoise olives

Whisk together Italian dressing, lemon juice, garlic and pepper.  Let
stand 10 minutes

Divide salad greens among 4 salad plates.  Arrange 4 tomatoe wedges and 4
slices of tofu on top.  Divide gree beans equally among salads.  Scatter
on mushrooms and 4 olives each
