1. Ordering Schedule

We will next order with UNFI on Thursday, June 15.  The order will arrive
Tuesday, June 20.

As in the past, our ordering from United Natural Foods shifts a bit in the
summer time.  While during the year we usually order once a week, in the
summer it is more often a every-other week order schedule.  We will keep
our door updated as to the next date we plan to order and when the order
will be ready for pick up.  Member orders are a big source of income for
the Co-op during the summer, so don't forget to take advantage of your
membership by ordering at just 25% above wholesale prices!

2.Handmade Products at the Co-op

Long-time member Janet Wagner has graciously knitted many colorful
potholders/scrub rags to sell at the Co-op.  They are only $5 each and all
proceeds of these purchases will go to the Co-op!  Come by and see these
great crafts!

3. Looking for Fun this Summer?
Speaking of the summer, are you looking for a way to chill out in the
middle of the summer heat?  Or maybe you need to commune with whole grains
and Toffuti Cuties. Maybe you have just always wanted to help out the
Co-op.

The summer is a time at the Co-op where things slow down.  But it doesn't
mean we take a total break!    We keep going, but as you probably could
guess, our finances take the "dog days" of summer literally and it is
unfeasible to keep a fully paid staff to help with this backup.  We are
looking for some Co-op supporters who could give some time here and there
to cashier at the Co-op in the moments when Carrie and Torin will need to
be out of town.

This will also help us supplement some staff hours that will need to be
filled when Carrie and Torin are away for 3 weeks on ma/paternity sometime
in July/August (let's root for July!) caring for the arrival of Baby
Eikler.

Most likely this would mean covering a 7 hour day at the cash register,
but we would fully train you on how to do a MARVELOUS job.

If you can help us out by being a volunteer cashier on an "as needed"
basis, please contact Carrie or Torin at the Co-op.  983-1547.

4. Scrumpteous Summer Sandwiches
Even though it's summer, the Co-op is still making sandwiches! Co-managers
Carrie and Torin are doning the "kitchen bandana" and functioning as
summer sandwichmakers, so come by and enjoy the old classics, as well as
some new summer flavors.

Remember these?
Barbeque Tofu, Black Bean Hummus, Green Pita, Happy Hummus Wrap, Spicy
Black Bean Wrap, Superhero Spinach, Tamari Tofu, and the Jailhouse Wrap
(formerly The Martha Stewart).  OH THEY'RE SO GOOD!

And introducing (drumroll please)...The Dancing Sprite, Egghead Eggsalad,
Eggless Salad (vegan alternative), Sicilian, Thai Peanut Tofu, and Spring
Mix Sidekick (first cousin to the Superhero Spinach).

The cost of the sandwiches are still $3.16, plus tax. We'll have a couple
sandwiches of two or three varieties each day, and there will always be a
vegan option (at least at the beginning of the day...while supplies
last!).  Also, sandwiches that don't get sold after a couple of days will
be dramatically reduced, so for those of you less picky, you could get a
good deal!

5. Recipe of the Week: Apple-Celery en Bleu
from Moosewood Restaurant Cooks at Home, by the Moosewood Collective

A substantial salad for these hot evenings when the last thing you want to
do is stand over a stove.  Add some crusty bread with olive oil and a
piece of dark chocolate and voila!  A healthy and remarkably satisfying
dinner

1 apple
2-3 celery stalks
1/3 C cumbled blue or Roquefort cheese
enough of your favorite leafy salad greens for 2 (try some locally grown
Romaine from the Co-op!)
1 T balsamic vinegar or fresh lime juice
1 T olive oil
1 t honey
salt and ground pepper to taste
(Carrie's suggested addition:  Walnuts!!)

Core the apple and cut it into 1/2 inch pieces.  Thinly slice the celery. 
Combine the apples, celery, and crumbled cheese in a serving bowl.

Rinse the greens, shake them dry, tear them into bite-sized pieces, and
add them to the bowl.  In a cup, use a form to whisk together the vinegar
or lemon juice, oil, and honey.  Pour the dressing over the salad, toss
well, and add salt and pepper to taste.

Serve immediately
