Co-op Update: March 2-9 1. Meal Plan Menu for March 5-9 2. Kitchen Manager Search will begin soon! 3. Banana Bread Recipe used at the Wellness Fair! 1. Meal Plan Menu for March 5-9 *Monday* Broccoli and Tofu in Spicy Peanut Sauce, Rice and Salad *Tuesday* Baked Potato Soup, Toppings and Bread *Wednesday* Spicy Chickpeas, Basmati and that Apricot Chutney *Thursday* Winter Vegetable Stew with Bread *Friday* Mediterranean Platter 2. Kitchen Manager Search will begin soon! Hey all you meal plan lovers and supporters! A heads up: Beginning next week, we will be posting the announcement of our search for a Kitchen Manager/Cook for the 2007-2008 Academic Year. Keep your eyes and ears open for persons who would bring experience and creativity to our meal plan and send them our way! Alas, this means our beautiful and talented Kitchen Manager, Kristina Perry, will be leaving us in the summer to begin new adventures! We will miss you, Kristina! 3. Banana Bread Recipe used at the Wellness Fair! Some of you who attended the Wellness Fair Thursday were asking for the recipe for the Banana Bread we were offering. The recipe comes from Mojeji Farm in Mountain Grove, Mo., from the kitchen of Carolyn Schrock (Jon's mom). We also think it tasted especially good because of the co-op and local ingredients we used. So here you go: Beautiful Banana Bread 1 cup mashed organic bananas Wet ingredients: 1/2 cup raw organic sugar 2 local farm fresh eggs 1/3 cup butter (bought ours at the Amish Deli and Market, 10 mi. north of Richmond on Hwy 27) Dry ingredients: 1 and 3/4 cups spelt flour (or your flour of choice) 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt Optional: 1/2 cup crushed nuts (we used walnuts from the co-op) Alternate mixing into wet ingredients your mashed bananas and your dry ingredients. Add water if your batter seems too stiff. Pour into greased bread form. Bake in oven for 40-45 minutes at 350 degrees Fahrenheit.
